Bentonite is extremely useful in the process of winemaking. It is used in the wine industry for clarification of must, wine base and high-quality wines against protein, reversible calloid and biochemical opacities, as well as their stabilization. Bentonite is an ideal adsorbent for removing biochemical turbidity and undesirable odors. The clarification process is based on the tandem of two processes - adsorption and flocculation of solids. Bentonite holds protein impurities and settles them to the bottom.
Natural sediments are not the only reason why wine becomes cloudy. The fact is that another almost elusive “lees” remains in the waste: protein mass (the remains of dead yeast), waste of yeast fungus, tartar etc. That is why the drink before bottling - regardless of the particular breed - is recommended for clarification.
Clarification is not the same as filtration. Various flannel and paper filters are used for filtration, but as a result – the quality of the drink suffers, it loses its strength and becomes flat. Therefore, clarification is always preferable.
Bentonite as a stabilizing and clarifying agent increasingly replaces traditional wine clarifiers: fish glue and gelatin. The surface area of the flakes in 1g of bentonite is more than 50 m2. A fine particle size and a peculiar sponge structure provide bentonite with a very strong sorption ability.
